The coffee cherries are hand-picked at their peak ripeness, then processed using the anaerobic natural method, where they undergo fermentation for 80 hours in transparent bags and plastic containers, helping to develop rich and complex flavors، After fermentation, the beans are dried under the sun on dedicated beds, allowing them enough time to reach the perfect moisture level. Throughout the harvest season, from October to December, family members follow precise protocols they apply annually to ensure consistent quality.
